One of Hawker 45’s most celebrated dishes is Laksa: richly-flavoured rice with prawns, a reduction of fumet, spices, squid, coconut cream and laksa leaves. Another is Bombas de Pho, which makes a nod to Barceloneta’s classic tapas while mixing hints of Vietnamese-style potato croquettes, accompanied by beef cheeks served in a pho reduction with lime emulsion and Sriracha.
