For a weekend in mid-December, the streets and squares of the historic center of Cardedeu fill with thousands of visitors to see more than 160 stalls with a wide range of craft products and Christmas items, including the famous torró artesà de borrego de Cardedeu prepared by the pastry makers of the village.
The borregos are traditional specialty pastries from Cardedeu. Although they have been made in many places, the manufacture of the anise borregos is an exclusive specialty of the bakeries of Cardedeu. The torró (nougat) was presented at the Christmas Fair of 2000, made with cumin and marzipan, and certified as torró artesà (artisan nougat). Apart from the crunchy traditional borregos and the distinctive nougat, other local specialties are also present at the fair: the soft borregos, elaborated and sold in bars of about sixty centimeters in length, and the variety of the thinly sliced borregos topped with crème brûlée.
The inauguration ceremonies take place in Sant Corneli square with local leaders, guests of honor and the pubilla and hereu de la vila as masters of ceremony, ending with the "Fire of the Fair" lighting, which warms up the popular escudella and gives chases the chill away for attendees. Over the three days of the fair, six tons of wood will burn for three days and nights.
